What’s exciting about Cali-Baja cuisine?
That it helps to break down the border. It
shows that our “region” is not defined by a
wall. It allows us to showcase the incredible
products our region produces and it fits
with the lifestyle.
What can visitors find on Galaxy’s menu?
Hamachi sashimi with charred jalapeño,
queso fundido with chorizo, braised pork
shoulder and beans, Baja fish tacos, chur-ros with Mexican chocolate and more.
Tell us about your epic, non-GMO, hand-
made heirloom corn tortillas: They’re the
foundation of everything we do. They’re a
big financial and space commitment, but I
didn’t want to do a Mexican place without
taking the foundation of the cuisine seriously.
Best thing about San Diego living? The
healthy lifestyle, beach, mountains and the
fact that it’s close to Mexico.
Favorite family activity? Going to the
beach and exploring Tijuana.
